The clearest number comes from the biggest pooled dataset available. A 2005 meta-analysis in Preventive Cardiology combined 41 controlled trials and 2,102 older adults, average age over 60. Endurance training raised VO2 max by about 3.8 mL/kg/min against controls, a 16 percent improvement. That's a large, consistent effect in exactly the population everyone assumes is past the point of change.
The relative gains hold up next to younger trainees too, which is what that opening trial showed: older and younger sedentary men on the same program, and the older group matched or beat the younger one in percentage terms. The absolute numbers were lower, they started lower and finished lower, but the engine responded just as readily to the stimulus.

How much should you expect, and how soon?

Being unfit is the one situation where a beginner has a real advantage. The further you are from your potential, the faster you close the gap.
The training mix that moves the number
Two ingredients do different jobs, and you need both.
The base is easy aerobic work, the kind where you can hold a conversation. That's zone 2, and it builds the delivery and extraction side: more capillaries, more mitochondria, more blood volume.
